Usually harvested between March and April, this particular coffee is only available during select seasons so we(TM)re delighted to be able to offer it as part of our limited edition collection.Darkly roasted for an intensely full-bodied flavour and to release the natural sweetness of the beans, Nicaragua Hacienda Sajonia has none of the flatness which you might associate with a heavy roast. Instead, the wet-processed and sun dried Arabica yields a wonderfully rich and layered cup, particularly delicious with a splash of milk to mellow out the smokier notes of the roast. Sure to be a hit with fans of our Guatemala Elephant coffee.

Coffee trees were badly struck by rust in 2014, a blight which affected plantations and smallholdings across the country. We were lucky to find this superbly layered Bourbon, striking the perfect balance between full-bodied intensity and a bright acidity. The cup yields roasted notes of chocolate and hazelnut, amplified by distinctive notes of citrus.A medium-dark roast brings out the coffee(TM)s natural sweetness and heady aroma, whilst maintaining that characteristic brightness. It(TM)s the ideal brew for those who like their coffee complex but not too heavy.

Crafted from the Mandheling variety of Arabica, the coffee(TM)s unique flavour profile is largely a result of the local artisan processing technique known as ~Giling Basah(TM). After being wet-hulled, pulped and partially dried, the beans turn a wonderful dark green colour " there(TM)s no coffee quite like it!To ensure the utmost freshness, we wait until the beans have been safely delivered to the UK before we start the roasting process. To complement the beans(TM) natural sweetness and slightly earthy quality we(TM)ve chosen a dark roast: the result is a richly layered coffee with soft fruit notes, a nutty bite and a superbly full-bodied finale. Crafted with beans from the Villa Esperanza cooperative, this medium-roasted coffee strikes the perfect balance: light enough to maintain a red berry brightness, the roast is just high enough to develop subtle cocoa notes. You might call it the cherry chocolate of our coffee rangeVilla Esperanza was established in 2003 as group of 20 or so smallholders from the Huila district of Colombia, and they(TM)ve since gone from strength to strength. All their coffee is hand-picked, before being pulped and washed at their own micro wet-mill. It(TM)s then dried on roof patios designed to protect the beans from the frequent rainfall. After undergoing a strict process of cupping and grading to secure the quality of the coffee, the beans travel back to the UK to be wood-fired in copper roasting machines, specially developed to produce the very best quality coffee by traditional artisan methods.The quality of the wood is vital for achieving a consistent result " the roastery uses oak from forests within a 10 mile radius, storing it in their Oxfordshire barn for a period of up to seven years until it achieves a suitable moisture content.
